Cinnamon-Pear Balsamic Roasted Sweet Potatoes

Sweet potato wedges tossed in a luscious blend of cinnamon-pear balsamic vinegar and butter-infused olive oil, then roasted until tender and caramelized.

Ingredients:

  • 4 medium sweet potatoes, peeled and cut lengthwise into 8 wedges each

  • 1/3 cup Cinnamon-Pear Balsamic Vinegar

  • 2 tbsp Butter Infused Olive Oil

  • 3/4 tsp kosher or sea salt

Instructions:

  1. Preheat oven to 400°F. Line a half-sheet pan with parchment paper.

  2. Whisk together the cinnamon-pear balsamic vinegar and butter infused olive oil. Toss sweet potato wedges in the mixture until well coated.

  3. Arrange wedges in a single layer on the prepared pan, avoiding overcrowding. Sprinkle with salt.

  4. Roast for about 45 minutes until potatoes are tender and the glaze is caramelized.
