Taco Soup

Ingredients

  • ½ pound lean ground beef

  • 1 (15 oz) can black beans, drained

  • 3 tablespoons dehydrated bell peppers (or 1 fresh bell pepper, chopped)

  • 1 medium white onion, chopped

  • 1 (15 oz) can fire roasted tomatoes

  • 1 small zucchini, chopped

  • 4 tablespoons taco seasoning

  • 4 tablespoons ranch seasoning

  • ½ teaspoon garlic salt

  • ½ teaspoon veggie pepper

  • 3 cups chicken broth

  • 1 (15 oz) can whole kernel corn, drained

  • 1 tablespoon olive oil

Instructions

  1. Brown ground beef and onions in olive oil in a large pot over medium heat until beef is cooked through.

  2. Add chicken broth to the pot.

  3. Stir in all remaining ingredients.

  4. Simmer until zucchini is tender, about 20-30 minutes.

  5. Serve hot with corn chips, cheddar cheese, and sour cream if desired.
