Ingredients
½ pound lean ground beef
1 (15 oz) can black beans, drained
3 tablespoons dehydrated bell peppers (or 1 fresh bell pepper, chopped)
1 medium white onion, chopped
1 (15 oz) can fire roasted tomatoes
1 small zucchini, chopped
4 tablespoons taco seasoning
4 tablespoons ranch seasoning
½ teaspoon garlic salt
½ teaspoon veggie pepper
3 cups chicken broth
1 (15 oz) can whole kernel corn, drained
1 tablespoon olive oil
Instructions
Brown ground beef and onions in olive oil in a large pot over medium heat until beef is cooked through.
Add chicken broth to the pot.
Stir in all remaining ingredients.
Simmer until zucchini is tender, about 20-30 minutes.
Serve hot with corn chips, cheddar cheese, and sour cream if desired.
