Herb, Ham & Cheese Frittata

Ingredients
6 eggs
½ cup evaporated milk
¼ cup Paducah Olive Oil’s Tuscan Herb Infused Olive Oil (substitute rosemary, wild dill, or basil)
½ tsp sea salt
¼ tsp black pepper
¼ cup chopped green onions
½ cup chopped red or green bell peppers (or mix of both)
½ cup diced ham
1½ cups grated cheddar cheese
Instructions
Preheat oven to 350°F. Grease a 9-inch pie plate.
In a mixing bowl, whisk eggs, evaporated milk, and olive oil until combined. Pour into prepared pie plate.
Sprinkle green onions, bell peppers, and ham evenly over the egg mixture.
Add half the cheese, gently pressing it into the egg mixture. Sprinkle remaining cheese on top.
Bake for 30–35 minutes, until the center is set and a knife inserted in the middle comes out clean. Cover loosely with foil if cheese browns too quickly.
Cool slightly before slicing and serving warm.
