Basil & Chevre Spread / Pasta Sauce
A creamy, bright spread with fresh goat cheese and fragrant basil — perfect for bread, veggies, or as a flavorful pasta sauce.
Ingredients:
8 oz fresh goat cheese
1/4 cup garlic olive oil
1 cup fresh basil, washed and dried
1 tsp A-Premium Balsamic or lemon juice
1 tsp sea salt (adjust to taste)
Directions:
Combine all ingredients in a food processor or blender and process until smooth and creamy. Serve as a spread or toss with pasta. Store covered in the refrigerator for up to 3 days.
Muhammara (Turkish Roasted Red Pepper Spread)
A smoky, nutty, slightly spicy dip made with roasted red peppers, walnuts, and fragrant spices. Great with crudités, crackers, or toasted bread.
Ingredients:
2 jars (7-8 oz each) roasted red peppers, rinsed and drained
1 cup coarse fresh bread crumbs (from baguette)
1 cup toasted walnuts (4 oz)
1 tbsp red-wine vinegar
1/2 tsp cumin
1/4 cup extra-virgin olive oil (Picual, Hojiblanca, or Arbequina recommended)
2 tbsp cayenne olive oil (optional; substitute with extra EVOO for less heat)
1/4 tsp salt
Directions:
In a food processor, purée red peppers, bread crumbs, walnuts, vinegar, cumin, cayenne oil, and salt until nearly smooth. With the motor running, slowly drizzle in olive oil to blend fully. Chill up to 3 days before serving; bring to room temperature first.
Basic Hummus
A smooth, classic hummus with a subtle twist from roasted Japanese sesame oil and quality extra virgin olive oil.
Ingredients:
2 (15 oz) cans organic garbanzo beans, drained
2 cloves garlic
1 tsp ground cumin
1 tbsp roasted Japanese sesame oil
2 tbsp fresh lemon juice
1/3 cup certified UP extra virgin olive oil or infused olive oil
2 tsp sea salt (to taste)
Directions:
Place all ingredients in a food processor and blend until creamy and smooth. Adjust seasoning as needed. Chill until serving, and drizzle with fresh olive oil on top if desired.
Baklouti Black Bean Dip
A smoky, spicy black bean dip with a hint of lime and heat from Baklouti chili olive oil. Perfect with tortilla or pita chips.
Ingredients:
1/4 cup garlic olive oil
1/4 cup Baklouti olive oil (use more garlic olive oil for less heat)
2 (15.5 oz) cans black beans, rinsed and drained
1 1/2 tsp salt
1/2 tsp ground cumin
2 tbsp fresh lime juice (plus more to thin if needed)
A few tablespoons water (to thin if needed)
1/4 cup fresh chopped cilantro (plus extra for garnish, optional)
Directions:
Blend all ingredients until smooth, adding water or lime juice to reach desired consistency. Taste and adjust seasoning. Serve warm, cold, or room temperature with chips.
