Extra Special Smashed Potatoes
Smashed or mashed, these red potatoes get an upscale twist with fragrant White Truffle Olive Oil and fresh rosemary, making them a luxurious yet comforting side dish everyone will love.

Ingredients
3 lbs red potatoes, cut into large cubes (no peeling needed)
2 sprigs fresh rosemary, divided
2 cloves garlic, minced
1 tbsp salt
4 tbsp Paducah Olive Oil’s Rosemary Olive Oil
2 tbsp Paducah Olive Oil’s White Truffle Olive Oil, plus a few drops for serving
½ cup half-and-half
Ground pepper, to taste
Instructions
Rinse potatoes and place in a large saucepan. Cover with water.
Remove leaves from half of one rosemary sprig; place the sprigs in the water with potatoes.
Add minced garlic and 1 tsp salt. Bring to a boil, reduce heat, and simmer until potatoes are soft (about 15 minutes).
Drain and remove rosemary sprigs. Transfer potatoes to a large bowl.
Mince remaining rosemary leaves.
Add minced rosemary, Rosemary Olive Oil, White Truffle Olive Oil, half-and-half, salt, and pepper to the potatoes.
Using a fork or potato masher, mash potatoes until well combined and desired consistency is reached.
Serve warm in a colorful bowl with a drizzle of extra White Truffle Olive Oil on top.
