Balsamic Salmon

Ingredients
1 lb salmon, cut into four 4-ounce fillets
4 tbsp Paducah Olive Oil’s Maple Balsamic Vinegar or Blackberry Ginger Balsamic Vinegar
4 tbsp Paducah Olive Oil’s Harissa Premium Olive Oil
2 tbsp fresh lemon juice, plus lemon slices for garnish
2 cloves garlic, minced
Salt, to taste
Instructions
In a small bowl, combine Harissa olive oil, garlic, lemon juice, balsamic vinegar, and salt.
Coat salmon fillets on both sides with the mixture.
Place salmon in a broiling pan about 4 inches from the broiler. Broil for 4–6 minutes or until fish flakes easily with a fork. (If fillets are thicker than 1 inch, turn once halfway through broiling.)
Plate and garnish with lemon slices. Serve immediately.
