Olive Oil Pumpkin Muffins

These healthy pumpkin muffins are naturally sweetened with maple syrup and honey, and made with Paducah Olive Oil’s Butter Olive Oil for a rich, moist texture. Full of warm spices and wholesome ingredients, they’re perfect for breakfast or snacks all fall long.

Ingredients

  • 1 cup pumpkin purée (canned or homemade)

  • 2 eggs

  • 2 tsp vanilla

  • 1 cup Paducah Olive Oil’s Butter Olive Oil

  • ½ cup maple syrup

  • ¼ cup honey

  • 1 ½ cups whole wheat flour

  • 1 ½ cups all-purpose flour

  • 2 tsp baking soda

  • 2 tsp baking powder

  • ½ tsp salt

  • 2 tsp cinnamon

  • 2 tsp pumpkin pie spice

Instructions

  1. Preheat oven to 350°F. Line a muffin tin with paper liners; set aside.

  2. In a large bowl, whisk together pumpkin, eggs, vanilla, olive oil, maple syrup, and honey until smooth.

  3. In a separate bowl, whisk flours, baking soda, baking powder, salt, cinnamon, and pumpkin pie spice.

  4. Gently fold dry ingredients into wet until just combined.

  5. Fill each muffin liner about ⅔ full with batter.

  6. Bake 15–18 minutes, or until muffins puff up and develop a light golden crust.
