Mango Shrimp Bites
These fresh and vibrant shrimp bites combine sweet mango, tangy balsamic, and crisp endive leaves for a light and flavorful appetizer. Perfect for parties, they’re quick to prepare and bursting with tropical flavor.

Ingredients
½ pound shrimp, cooked, peeled, deveined, and chopped
½ fresh mango, finely diced (about 1 cup)
2 tbsp fresh cilantro, chopped
¼ cup red onion, finely chopped
2 tbsp ultra-premium extra-virgin olive oil
1 tbsp Paducah Olive Oil’s Mango Balsamic Vinegar
1 tbsp lime juice
2 tsp fresh ginger, grated
¼ tsp salt
Pepper, to taste
24 endive leaves (about 3 small heads)
Instructions
Gently remove endive leaves and wash; allow to dry.
In a bowl, combine shrimp, mango, onion, cilantro, olive oil, mango balsamic vinegar, lime juice, ginger, salt, and pepper.
Spoon mixture into endive leaves.
Prepare shrimp mixture up to 1 hour ahead. Fill endive leaves no more than 30 minutes before serving.
Arrange on a serving platter and serve immediately.
Variations
Try Paducah Olive Oil’s Cilantro & Roasted Onion or Persian Lime Olive Oil for added flavor.
For a salad version, chop the endive and toss with shrimp mixture for an easy alternative.
