Mango Shrimp Bites

These fresh and vibrant shrimp bites combine sweet mango, tangy balsamic, and crisp endive leaves for a light and flavorful appetizer. Perfect for parties, they’re quick to prepare and bursting with tropical flavor.

Ingredients

  • ½ pound shrimp, cooked, peeled, deveined, and chopped

  • ½ fresh mango, finely diced (about 1 cup)

  • 2 tbsp fresh cilantro, chopped

  • ¼ cup red onion, finely chopped

  • 2 tbsp ultra-premium extra-virgin olive oil

  • 1 tbsp Paducah Olive Oil’s Mango Balsamic Vinegar

  • 1 tbsp lime juice

  • 2 tsp fresh ginger, grated

  • ¼ tsp salt

  • Pepper, to taste

  • 24 endive leaves (about 3 small heads)

Instructions

  1. Gently remove endive leaves and wash; allow to dry.

  2. In a bowl, combine shrimp, mango, onion, cilantro, olive oil, mango balsamic vinegar, lime juice, ginger, salt, and pepper.

  3. Spoon mixture into endive leaves.

  4. Prepare shrimp mixture up to 1 hour ahead. Fill endive leaves no more than 30 minutes before serving.

  5. Arrange on a serving platter and serve immediately.

Variations

  • Try Paducah Olive Oil’s Cilantro & Roasted Onion or Persian Lime Olive Oil for added flavor.

  • For a salad version, chop the endive and toss with shrimp mixture for an easy alternative.
