Icebox Bread and Butter Pickles

Quick and tangy pickles packed with sweet and savory flavors, perfect for making ahead and storing in the fridge. Ready to enjoy after just one day and great for sandwiches, snacks, or burgers.

Ingredients

  • 4 quart-sized canning jars with lids and bands

  • 3 thinly sliced Vidalia onions

  • 36 pickling cucumbers

  • 4 cups sugar

  • 4 cups apple cider vinegar

  • 1/3 cup pickling salt

  • 2 tbsp pickling spices

Instructions

  1. Sterilize jars, lids, and bands by simmering for 10 minutes or using the dishwasher.

  2. Pack cucumbers and onions tightly into jars up to the neck.

  3. In a large saucepan, combine sugar, apple cider vinegar, pickling salt, and pickling spices. Heat until sugar dissolves.

  4. Pour the hot vinegar mixture over cucumbers and onions in the jars, covering completely.

  5. Seal jars with lids and bands, then refrigerate.

  6. Pickles are ready to enjoy after 24 hours and can keep refrigerated for up to 6 months.
