Baked Zucchini Noodles in Olive Oil

A light, simple side dish featuring tender zucchini noodles tossed in extra virgin olive oil and baked until just tender. Perfect alongside fried chicken or pork chops, with optional crunchy almonds or a splash of sweet balsamic for extra flavor.

Ingredients

  • 2–3 medium zucchini

  • 2 tbsp extra virgin olive oil (e.g., Hojiblanca)

  • 1/4 tsp salt

  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 400°F.

  2. Peel zucchini thinly or spiralize into noodles. Toss with salt, pepper, and olive oil to coat evenly.

  3. Spread zucchini noodles on a sheet pan in a single layer.

  4. Bake for about 10 minutes, checking at 5 minutes to avoid overcooking.

  5. Serve immediately. Optionally, sprinkle with chopped almonds or drizzle with a sweet balsamic like Black Fig or Blueberry for extra crunch and flavor.
