Ingredients
2–3 medium zucchini
2 tbsp extra virgin olive oil (e.g., Hojiblanca)
1/4 tsp salt
1/4 tsp black pepper
Instructions
Preheat oven to 400°F.
Peel zucchini thinly or spiralize into noodles. Toss with salt, pepper, and olive oil to coat evenly.
Spread zucchini noodles on a sheet pan in a single layer.
Bake for about 10 minutes, checking at 5 minutes to avoid overcooking.
Serve immediately. Optionally, sprinkle with chopped almonds or drizzle with a sweet balsamic like Black Fig or Blueberry for extra crunch and flavor.
