Edamame “Pesto”

Ingredients

  • 2 cups shelled edamame (cooked soybeans)

  • 1/3 cup toasted and shelled pumpkin seeds

  • 1/2 cup UP Certified Olive Oil

  • 2 cloves garlic

  • 1/3 cup grated pecorino cheese (optional)

  • Sea salt to taste

Instructions

  1. Pulse all ingredients in a food processor or blender until creamy and thick.

  2. Refrigerate in a tightly sealed container for up to 2 days, or serve immediately.

Serving Ideas

  • Spread on sandwiches or toast

  • Dip for fresh veggies, crackers, or bread
