Curried Beef Stew

A rich and hearty Asian-inspired beef stew simmered with curry spices, tender potatoes, and carrots, perfect served over rice for a comforting meal.

Ingredients:

  • 3/4 lb beef stew meat, cut into 1–1½ inch pieces

  • 1/4 tsp salt

  • 1/8 tsp pepper

  • 2 tbsp all-purpose flour

  • 1 tbsp olive oil

  • 1 large onion, cut into 3/4-inch pieces

  • 2 tbsp curry powder

  • 2 tsp soy sauce

  • 2 bay leaves

  • 3 cups beef stock

  • 1 1/2 lbs potatoes, cut into 1-inch cubes

  • 2 large carrots, thinly sliced

  • 1 tbsp white vinegar

Instructions:

  1. Sprinkle beef with salt and pepper, then toss with flour.

  2. Heat olive oil in a Dutch oven over medium-high heat. Brown beef and onions, stirring occasionally.

  3. Add curry powder, soy sauce, bay leaves, and beef stock. Bring to a boil, then reduce heat and simmer covered for 45 minutes.

  4. Stir in potatoes and carrots, simmer until meat and vegetables are tender, about 1¼ hours.

  5. Remove bay leaves and stir in vinegar.

  6. Serve hot, optionally with brown or white rice.
