Curried Beef Stew
A rich and hearty Asian-inspired beef stew simmered with curry spices, tender potatoes, and carrots, perfect served over rice for a comforting meal.
Ingredients:
3/4 lb beef stew meat, cut into 1–1½ inch pieces
1/4 tsp salt
1/8 tsp pepper
2 tbsp all-purpose flour
1 tbsp olive oil
1 large onion, cut into 3/4-inch pieces
2 tbsp curry powder
2 tsp soy sauce
2 bay leaves
3 cups beef stock
1 1/2 lbs potatoes, cut into 1-inch cubes
2 large carrots, thinly sliced
1 tbsp white vinegar
Instructions:
Sprinkle beef with salt and pepper, then toss with flour.
Heat olive oil in a Dutch oven over medium-high heat. Brown beef and onions, stirring occasionally.
Add curry powder, soy sauce, bay leaves, and beef stock. Bring to a boil, then reduce heat and simmer covered for 45 minutes.
Stir in potatoes and carrots, simmer until meat and vegetables are tender, about 1¼ hours.
Remove bay leaves and stir in vinegar.
Serve hot, optionally with brown or white rice.
