Honey-Chipotle Salmon with Cauliflower Rice Pilaf

A flavorful, healthy main dish featuring sweet and smoky honey-chipotle glazed salmon served alongside a vibrant cauliflower rice pilaf with veggies, almonds, and fresh herbs.

Ingredients:

  • 1 1/4 lbs salmon, skin on, cut into 4 pieces

  • 1/2 tsp chopped chipotle

  • 2 tsp honey

  • 3 tbsp extra virgin olive oil

  • 4 cups cauliflower rice

  • 1/2 cup frozen diced carrots and peas

  • 2 cloves garlic, minced

  • 1/4 cup sliced almonds

  • 1/4 cup fresh cilantro

  • 1/4 cup grated parmesan cheese

  • 1 tbsp lime juice

  • Salt (about 1/2 tsp total, divided)

Instructions:

  1. Preheat oven to 425°F. Line a baking sheet with foil.

  2. Place salmon skin-side down on baking sheet; sprinkle with 1/4 tsp salt. Mix chipotle and honey; brush over salmon. Bake 6–12 minutes, until fish flakes easily.

  3. Heat olive oil in skillet over medium heat. Add cauliflower rice; cook about 3 minutes, stirring occasionally until soft and hot.

  4. Add carrots, peas, and garlic; cook 2 more minutes, stirring occasionally. Remove from heat.

  5. Stir in almonds, cilantro, parmesan, lime juice, and remaining salt.

  6. Serve salmon alongside cauliflower rice pilaf.
