Crunchy Turkey Salad

A refreshing, crunchy salad with tender turkey, crisp Bibb lettuce, and toasted almonds, all tossed in a tangy black fig balsamic vinaigrette with poppy seeds.

Ingredients:

  • 1/3 cup extra virgin olive oil (Paducah Olive Oil Co.)

  • 3 tbsp black fig balsamic vinegar (Paducah Olive Oil Co.)

  • 1 tbsp poppy seeds

  • 1/4 tsp freshly ground black pepper

  • 1 large head Bibb lettuce

  • 2 cups cooked turkey or chicken, finely diced

  • 3 large green onions, chopped

  • 1 cup slivered almonds

  • 1 cup chow mein noodles

Instructions:

  1. Whisk together olive oil, black fig balsamic vinegar, poppy seeds, and black pepper; set aside.

  2. Clean and finely chop the Bibb lettuce (about 8 cups).

  3. In a medium bowl, combine lettuce, turkey, almonds, green onions, and chow mein noodles.

  4. Toss with the dressing and serve immediately.
