Ingredients
1 lb baby carrots
4 cloves garlic, minced
1 tsp fresh thyme or parsley
1/2 tbsp honey
3 dashes ground black pepper
1/4 tsp salt
2 tbsp Paducah Olive Oil’s Butter Olive Oil
2 tbsp browned butter (butter cooked over medium heat until golden and nutty)
Instructions
Preheat oven to 400°F.
In a skillet over medium heat, melt butter until it foams and turns golden brown. Add garlic and sauté briefly until fragrant.
Add carrots, honey, salt, pepper, and thyme or parsley; toss to coat evenly.
Transfer skillet (or carrots on a sheet pan) to oven and roast for 20 minutes, until tender and caramelized.
Serve warm and garnish with extra herbs if desired.
