Spaghetti with Parsley & Fresh Tomatoes

This light and fresh pasta dish comes together in minutes, making it perfect for busy weeknights or summer dinners. Ripe tomatoes, bright parsley, and good olive oil do all the work—simple and delicious.

Ingredients

  • 1 pound boxed spaghetti (or specialty pasta of choice)

  • 4 large tomatoes, roughly chopped

  • ¼ cup extra-virgin olive oil (robust variety recommended)

  • ¼ cup parsley, chopped

  • Kosher salt, to taste

Instructions

  1. Cook spaghetti in a pot of salted water until al dente. (Optional: add a few drops of garlic olive oil to the water for extra flavor.)

  2. While the pasta cooks, combine chopped tomatoes, parsley, and olive oil in a large bowl. Mix well and season with salt.

  3. Drain cooked spaghetti and add directly to the bowl. Toss until well coated.

  4. Serve warm or at room temperature.
