Roasted Butternut Squash with Garam Masala
A flavorful and fragrant roasted butternut squash dish seasoned with warm garam masala, brown sugar, and fresh thyme. Perfectly caramelized and tender, it’s a delicious and easy side for any meal.

Ingredients:
1 peeled butternut squash, cut into 1½-inch cubes (about 2-3 lbs)
1 tsp garam masala seasoning
1½ tbsp olive oil
2 tsp brown sugar
2 tsp kosher salt
2 tsp chopped thyme
Instructions:
Preheat oven to 425°F. Line a sheet pan with parchment paper or spray with nonstick cooking spray.
In a small bowl, mix together brown sugar, kosher salt, and garam masala.
Toss the butternut squash cubes with olive oil, then sprinkle the seasoning mixture over them and toss to coat evenly.
Spread the squash in a single layer on the prepared sheet pan. Roast for 15 minutes without stirring.
Remove from oven and gently turn the squash pieces with a spatula.
Continue roasting for another 10 minutes, or until the squash is fork-tender and caramelized.
Remove from oven, sprinkle with chopped thyme, and serve warm.
