Ingredients
2 cups cooked chickpeas
½ cucumber, diced
1 cup cherry tomatoes
¼ cup sun-dried tomatoes, chopped
1 tbsp Paducah Olive Oil’s Cilantro & Roasted Onion Olive Oil
8 Kalamata olives
8 Manzanilla olives
½ red onion, chopped
3 tbsp fresh mint, chopped
¼ cup flat-leaf parsley, chopped
1 clove garlic, minced
1 tbsp Dijon mustard
3 tbsp lemon juice
Freshly ground black pepper, to taste
Instructions
In a large salad bowl, combine chickpeas, cucumber, cherry tomatoes, sun-dried tomatoes, olives, red onion, mint, and parsley.
In a small bowl, whisk together garlic, Dijon mustard, and lemon juice.
Pour dressing over the salad and toss to coat evenly.
Season with freshly ground black pepper and serve immediately or chill before serving.
