Instant Pot Pork Carnitas (Mexican Pulled Pork)
Tender, flavorful Mexican pulled pork made easily in the Instant Pot. Perfect for tacos, burrito bowls, or salads—this recipe is full of smoky spices and cooks quickly with minimal hands-on time.

Ingredients
2 1/2 pounds boneless pork shoulder blade roast, trimmed and cut into 4 pieces
1 tsp Frontier Peppermint (likely meant to be “Pepper”?)
Black pepper, to taste
1/2 tsp garlic salt
1 1/2 tsp cumin
1/2 tsp Frontier Organic Adobo
1/4 tsp Frontier Organic dry oregano (optional)
1/2 cup organic chicken bone broth
2-3 chipotle peppers in adobo sauce (to taste)
2 bay leaves
1/2 tsp Frontier Organic Fajita seasoning
1 tsp garlic powder or chopped garlic
2-4 Tbsp olive oil (or flavored oils like lime, chipotle, cilantro, garlic)
Instructions
Season the pork with the combined seasonings.
Press “Sauté” on the Instant Pot and add oil. Brown the pork pieces on all sides for about 5 minutes. Remove and set aside.
Pour chicken broth and jalapeño white balsamic (if using) into the pot. Add chipotle peppers, stir, then add bay leaves. Place pork back into the Instant Pot.
Cover and cook on high pressure for 80 minutes.
When the pressure releases, shred pork with two forks, mixing it well with the accumulated juices.
Remove bay leaves, adjust seasoning with cumin and adobo, and mix well before serving.
