Greek Style Chicken Souvlaki with Lemon

Ingredients
Marinade:
1 cup plain whole milk yogurt
⅓ cup Paducah Olive Oil Garlic Olive Oil
Juice of ½ lemon
1 tbsp Paducah Olive Oil Neapolitan Balsamic Vinegar
2 tsp kosher salt
Fresh ground pepper, to taste
Chicken Souvlaki:
1 ½ cups boneless, skinless chicken breast, cut into 1-inch pieces
Instructions
Whisk all marinade ingredients in a bowl until well combined.
Add chicken pieces to the marinade and place in a ziplock bag or covered bowl. Refrigerate for at least 4 hours or up to 24 hours.
To cook:
Grill: Prepare grill for indirect heat. Thread chicken onto skewers and grill, turning every 2 minutes, about 8 minutes total. Remove and let rest covered briefly.
Oven Broil: Skewer chicken or arrange in a single layer on a greased broiler pan or mesh rack. Broil on top rack at 450°F for 6 minutes, then turn broiler on for 4 more minutes, turning to brown evenly.
Serve immediately.
Notes
Serve over salad with olives, onions, and blue cheese, or on a bed of rice or quinoa for a full meal.
