Greek Style Chicken Souvlaki with Lemon

Tender chicken marinated in creamy yogurt, garlic olive oil, and tangy balsamic, grilled to perfection. This quick and flavorful Greek classic is perfect for a light, Mediterranean-inspired meal served on its own or over rice and salad.

Ingredients

Marinade:

  • 1 cup plain whole milk yogurt

  • ⅓ cup Paducah Olive Oil Garlic Olive Oil

  • Juice of ½ lemon

  • 1 tbsp Paducah Olive Oil Neapolitan Balsamic Vinegar

  • 2 tsp kosher salt

  • Fresh ground pepper, to taste

Chicken Souvlaki:

  • 1 ½ cups boneless, skinless chicken breast, cut into 1-inch pieces

Instructions

  1. Whisk all marinade ingredients in a bowl until well combined.

  2. Add chicken pieces to the marinade and place in a ziplock bag or covered bowl. Refrigerate for at least 4 hours or up to 24 hours.

  3. To cook:

    • Grill: Prepare grill for indirect heat. Thread chicken onto skewers and grill, turning every 2 minutes, about 8 minutes total. Remove and let rest covered briefly.

    • Oven Broil: Skewer chicken or arrange in a single layer on a greased broiler pan or mesh rack. Broil on top rack at 450°F for 6 minutes, then turn broiler on for 4 more minutes, turning to brown evenly.

  4. Serve immediately.

Notes

Serve over salad with olives, onions, and blue cheese, or on a bed of rice or quinoa for a full meal.
