Pork Chops with Blueberry Balsamic Vanilla Sauce
Succulent bone-in pork chops dry-rubbed with a smoky, earthy blend of seasonings, grilled to perfection, then topped with a blueberry balsamic sauce that features the richness of our Pure Vanilla Extract.
Ingredients
Pork Chops:
2 tablespoons Paducah Olive Oil Wholesome brown sugar
1 1/2 tablespoons Paducah Olive Oil Smoked Paprika
1 1/2 teaspoons Paducah Olive Oil Sea Salt
3/4 teaspoon Paducah Olive Oil Black Pepper
1 1/2 teaspoons Paducah Olive Oil Onion Powder
1 1/2 teaspoons Paducah Olive Oil Garlic Power
1/4 teaspoon Paducah Olive Oil Cayenne (optional)
4 bone-in pork chops
Vanilla Blueberry Balsamic Sauce:
2 cups fresh or frozen blueberries
1/4 cup Paducah Olive Oil Blueberry Balsamic Vinegar
1 tablespoon fresh rosemary, finely chopped
1 tablespoon fresh thyme, finely chopped
1 teaspoon Paducah Olive Oil Vanilla Extract
1 teaspoon Dijon mustard
1/4 teaspoon Paducah Olive Oil Black Pepper
Instructions
Preheat two separate zones on your grill, one at high heat and the other at medium heat.
In a small bowl, combine brown sugar, smoked paprika, salt, pepper, onion powder, garlic powder and cayenne. Sprinkle spice mixture evenly over pork chops, then rub it into both sides of chops.
Place chops on high-heat section of grill and sear for about 3 minutes per side; transfer to medium-heat section and continue cooking, turning periodically, for another 5 to 8 minutes or until internal temperature in thickest part of chop reaches 145 degrees. Remove from heat and let rest for 5 minutes.
Meanwhile, into a saucepan over medium heat, add all Vanilla Blueberry Balsamic Sauce ingredients. Bring to a boil, then reduce heat and let simmer for 5 to 7 minutes, stirring often, until blueberries pop and release their juices. Remove from heat and serve warm over chops.
