Strawberry Balsamic Mozzarella Chicken

An elegant balsamic chicken recipe that creates a beautiful and delicious dish that’s sure to impress. Expertly seasoned grilled chicken breasts are topped with vanilla-balsamic strawberries and fresh mozzarella pearls. Garnish with fresh basil and balsamic glaze for an extra-stunning look and exceptional complementary flavor.


Ingredients

  • 1 1/2 teaspoons Paducah Olive Oil Himalayan Pink Salt

  • 1/2 teaspoon Paducah Olive Oil Black Pepper

  • 1/2 teaspoon Paducah Olive Oil Garlic Powder

  • 1/2 teaspoon Paducah Olive Oil Onion Powder

  • 4 boneless, skinless chicken breasts

  • 2 cups diced strawberries

  • 1 teaspoon Paducah Olive Oil Vanilla Exract

  • 2 tablespoons Paducah Olive Oil Strawberry Balsamic Vinegar

  • 1 cup mozzarella pearl balls

  • Oil for grill grates

  • Fresh basil, thinly sliced, for serving

  • Paducah Olive Oil Strawberry Balsamic glaze, for serving (optional)

Directions

  1. Preheat a grill or grill pan to medium-high heat and lightly oil grates.

  2. In a small bowl, combine salt, pepper, garlic powder and onion powder. Season both sides of each chicken breast.

  3. Grill chicken for about 5 to 7 minutes per side, until internal temperature reaches 165 degrees.

  4. Meanwhile, in a bowl, combine strawberries, vanilla extract and balsamic vinegar.

  5. When chicken is done cooking, transfer to serving plate and spoon strawberries and mozzarella over top. Garnish with fresh basil, then (optional) drizzle with balsamic glaze just before serving.
